The Group

Three rooms, one harbour,
two food cultures.

The dede restaurant group is the family of restaurants of chef Ahmet Dede and co-founder Maria Archer, all within a few doors of each other in Baltimore, a coastal village in West Cork, Ireland.

It began with Dede at the Customs House — a two-Michelin-star restaurant where superb local produce is layered with the flavours of Ahmet’s Turkish upbringing. Around it has grown a small family: Baba’de, the Bib Gourmand mezze restaurant; Dede Cellar & Pantry, the wine bar and bottle shop; and the kitchen garden that feeds them all.

Raised in Turkey and at home on the Irish coast, Ahmet brings two food cultures to one table. At the Customs House he and his mostly Turkish brigade plate each course with quiet pride — layers of authentic flavour that never overpower the core ingredient.

He was named Best Chef in Ireland at the Irish Restaurant Awards in 2022 and again in 2026, and Chef of the Year at the Food & Wine Awards 2023.

Maria runs the room with a warmth that has become the restaurants’ signature — service that feels less like a Michelin dining room and more like an evening in a friend’s home, in a coastal village at the edge of Europe.

Across the group, that welcome is the constant: from the tasting menu at the Customs House to a glass at the counter of the Cellar & Pantry.

Charcuterie and cheese at Dede Cellar & Pantry

Wine Bar & Bottle Shop

A walk-in wine bar by the harbour — charcuterie, big cheese and good bottles. Coffee and patisserie by morning; from noon, a kitchen by Ahmet Dede of oysters, lobster roll and plates with a glass to match. No bookings, just come.

The shop carries a short, living list of small growers — every bottle hand-chosen by the group’s sommelier — alongside a larder of West Cork cheese, olive oil and dede goods.

The Kitchen Garden

Grown for the kitchens.

Behind the restaurants sits the group’s own kitchen garden — poly tunnels where vegetables and herbs are grown for the kitchens of the Customs House, Baba’de and the Cellar & Pantry.

It is the quietest part of the group, and the first: the plate starts here, with West Cork soil, before Anatolian spice ever touches it.
